Cucumber sandwiches with a twist
A British classic, they seem to be a failsafe choice for picnic food. You might think these don’t need a recipe but…how about these twists?
You need:
Bread of your choice, cream cheese, cucumber, tomato, spinach and an avocado. And don’t forget salt and pepper!
How to:
- Spread cream cheese on both slices of bread.
- Layer cucumber, tomato, spinach, and avocado on one slice.
- Sprinkle with a pinch of salt and pepper.
- Cut in half and enjoy your fresh, veggie-packed sandwich perfect for a summer picnic!
Ready for a twist? Why not add some finely chopped fresh mint to your sandwiches.
Strawberry yoghurt pots
Healthy AND yummy, these little desserts taste of summer and are fab to enjoy while lounging on a soft blanket watching the world go by.
You need:
450gr Greek or Natural yoghurt
4 tbsp honey
1 tsp vanilla extract
Small jars with lids
Optional but highly recommended:
Fresh berries
Digestive biscuits
Edible flowers such as pansies*
Just mix the yoghurt with the honey and vanilla extract and fill it into the small jars. Slice the berries, crush the biscuits and make sure the edible flowers are clean, then top your yoghurt with them to make it look all cute. Top tip: don’t add the toppings until you’re ready to eat so it looks delicious but also doesn’t get soggy before you tuck in.
